Coffee recipes
Traditional
For 1 portion:
1 tsp. ground coffee
1 cup of water
In cezv fill in water and boil it. Take from the fire; pour ground
coffee into boiled water, cautiously stir with the spoon before
scum formation and put on a slow fire. As soon as the cap of scum
will rise, remove cezv from fire, put there 1 teaspoon of cold water
and pour in cups.
Turkish coffee
For 1 portion:
1 tsp. ground coffee
1 tsp. sugar
1 cup of water
Salt
Pour in cezv ground into the dust coffee, sugar and some salt,
mix, fill in with cold water, again mix and put on slow fire, and
it is even better - on the heated sea sand. When dense scum will
start to rise, remove cezv from fire, put small slice of an ice,
allow infusing 1-2 minutes. By tradition, first it is necessary
to take the scum with the teaspoon from the infused coffee, and
then pour it in the cup, in advance put tea spoon of removed scum
on the top.
Glasse
For 2 portions:
1 cup of ready coffee
1 cup of ice-cream (vanilla, chocolate or coffee)
2 tsp. chocolate syrup
2 tbsp. sweet whipped cream
1 tsp. crumbed sugar candies (multi-coloured)
Make coffee in the traditional way and cool it. Whip slightly cooled
cream, a little having sweetened with powdered sugar or just sugar.
Put an ice-cream in wine glasses (300ml). Fill in it with chocolate
syrup. Cautiously add cooled coffee. In each wine glass put on big
spoon of whipped cream and strew with fruit-drop crumb.
Mexican coffee
For 4 portions:
2 glasses of strong black coffee
2 tbsp. sugar
2 tsp. ground cinnamon
Pinch of grated nutmeg
2 tbsp. chocolate syrup
0, 5 glasses of whipped cream
Mix chocolate syrup, cream, cinnamon, sugar and nutmeg. Pour in
the received mix of coffee and carefully mix. Pour in cups. Decorate
with whipped cream and cinnamon.
The recipe of Jamaica coffee
For 4 portions:
3 glasses of strong black coffee
1 orange and 0, 5 of lemon sliced on thin rings
3 tbsp. rum
1/3 glasses of powdered sugar
Put the cut citrus in stew-pan, fill in coffee and put on fire.
When the mix will start boiling, pour in it rum, put powdered sugar
and mix. As soon as the sugar will be dissolved, at once remove
it from the plate. While coffee has not cooled down, pour it in
glasses or cups and decorate with segments of lemon.
Alexander
For 2 portions:
4 tbsp. strong coffee
4 tbsp. cognac
4 tbsp. cocoa
4 tbsp. whipped cream
Grated chocolate
Sugar
Ice
Make cocoa and strong coffee, allow drinks to cool down. Whip cream
to the strong scum. Mix coffee and cocoa, having sweetened on taste.
Add cognac. Pour a mix in glasses on slices of a chipped ice. Put
whipped cream on the top, 2 tablespoons on a portion. Strew grated
chocolate.
Pleasure
For 2 portions:
2 tbsp. ground coffee
300 ml of water
4 grams of cardamom seeds
6 candied cherries
6 pieces of pineapple
2 pieces of a food ice
Cardamom seeds boil within 5 minutes in the water necessary for
making coffee. Allow an aromatic mix to cool down, and then filter
it. On the water which has absorbed aroma of cardamom, make coffee.
In high heat-resistant glasses (300 ml) put on the big piece of
an ice and fill in with fresh ready coffee. Decorate with pineapples
and cherry.
Orange coffee
For 4 portions:
2, 5 glasses of hot coffee
2/3 glasses of orange liquor
1 tbsp. grated dried peel of an orange
2 tsp. powdered sugar
2 glasses of whipped cream
Whip cream to the sick scum; add powdered sugar and dried orange
peel. The received mix cool during 30 minutes. Pour hot coffee in
glasses, and add liquor. On cocktail surface lay out cooled whipped
cream, decorate with segments of an orange.
New Orleans coffee
For 4 portions:
3 tbsp. ground coffee
1 tbsp. ground chicory
100 ml milk
Mix ground coffee with ground chicory. Make strong coffee. While
coffee prepares, warm up milk and mugs for coffee. Pour coffee in
mugs, and add hot milk.
Iced whipped coffee
Made strong coffee
Sugar to taste
Ice
In mixer or shaker mix made strong coffee, ice, and sugar. Whip,
so the ice will turn to a crumb, and on color will seem, that there
is milk in it. Serve in high glasses or bocals. Better prepare coffee
in a method of espresso.
Southern coffee with ice and spices
For 4 portions:
4 glasses of strong black coffee
4 cinnamon sticks (or 2 items of the spoon)
6 kidneys of carnation
3-4 tbsp. sugar (or to taste)
4 tbsp. coffee liquor
Cubes of ice
Pour out coffee in the big capacity. Add cinnamon sticks (or ground
cinnamon), carnation and sugar to taste. Mix it well and leave at
least on an hour for coffee to insist. Filter coffee in the big
jug; add liquor and cubes of an ice. Serve in the cooled glasses.
Mocha “in the cloud “
For 6 portions:
5 glasses of milk
2, 5 glasses of strong black coffee
Sugar to taste
3 tbsp. vanilla sugar
3, 9 oz chocolate (not sweet)
2/3 glasses of whipped cream
6 cinnamon sticks
Ground nutmeg
Pour out 3 glasses of milk in the saucepan and put it on small
fire, but not boil. Mix coffee with the remained milk in the big
fire-resistant jug. Add sugar to taste, but watch that the mix has
turned out not too sweet as it is better to put sugar also in hot
milk. Again put a saucepan with milk on fire and add vanilla sugar.
Make it boiling, then low the fire. Put chocolate cubes in milk.
Cautiously heat up; stirring slowly while chocolate will not thaw.
Pour out milk with chocolate in a jug and whip to the scum appearance.
Serve in high mugs or glasses with whipped cream, cinnamon stick
and pinch of a nutmeg.
Cafe-Brule
For 4-6 portions:
The dried peel of 1 orange which has been removed by one long strip
The dried peel of 1 lemon which has been removed by one long strip
4 slices of sugar
6 kidneys of a carnation
1 cinnamon stick
2 glasses of brandy
3-4 tbsp. orange liquor
2 glasses of strong black coffee
Put orange and citric dried peel in frying pan. Add sugar, carnation,
cinnamon, brandy and orange liquor. Heat up, so the sugar will dissolve,
constantly stirring slowly. Make coffee, fire a mix with brandy,
then slowly, with thin stream pour in it coffee. Serve with cinnamon
stick and decorations from orange dried peel.
Coffee essence
5, 3 oz ground coffee
0, 26 gal water
14 oz powdered sugar
Sometimes for making coffee there is no time or opportunity. In
this case you need a coffee essence. For its preparation just fill
in ground coffee with boiling water and boil about 15 minutes. Then
take from the fire, add powdered sugar, mix, filter and pour in
bottles. Such extract keeps long enough qualities of just made coffee,
and for drink preparation it is enough to dissolve 1-2 tea spoons
of essence in a cup of hot water or milk.
